dc.description.abstractSider er et resultat av fermentert epleråstoff, der mange biokjemiske prosesser påvirker de organoleptiske egenskapene i sluttproduktet. Samspillet mellom gjær og epleråstoffet er avgjørende for produsere karakteristiske og smakfulle sider, som fremmer ønsket aroma med en balanse av sødme, bitterstoff (tannin) og syre. To eplesorter, Aroma og Mutsu ble presset til eplejus og fermentert med tre forskjellige gjærtyper under like betingelser. Det resulterte i 6 forskjellige sidervarianter. Disse ble videre tilsatt sukker eller honning før sekundærfermentering for å fremme sødme og kullsyre i sluttproduktet og ga ytterligere 6 nye sidervarianter. Hensikten med oppgaven var å studere forskjeller og likheter i produksjonen av smaks og aromakomponenter i de ulike sidervariantene, som resultat av eplesort og/eller gjærtype. I tillegg var det ønskelig å studere effekten på innholdet av flyktige komponenter og polyfenoler som følge av sider tilsatt sukker sammenlignet med honning. Fermenteringsprosessen ble fulgt daglig gjennom brix målinger frem til endringen av oppløst tørrstoff avtok ved dag 9. Det ble tatt ut prøver av begge eplejustypene før fermentering og av alle sidervariantene etter tilsats av sukker/honning. Innholdet av frie aminosyrer, karbohydrater, organiske syrer, flyktige komponenter, polyfenoler og L-eplesyre ble bestemt gjennom ulike analysemetoder. Resultatene fra analysene viste noen forskjeller i forekomst av enkelte biokjemiske komponenter for de ulike eplejustypene og sidervariantene. De mest fremtredende og viktige flyktige komponentene som økte fra eplejus til ferdig sider for samtlige av variantene var etyl acetat, isobutyl acetat, isoamyl acetat, etyl hexanoat, etyl octanoat og 3-metyl-1-butanol. Disse forbindes med fruktig-,blomsteraktig, alkohol- og søtligaroma og er viktig for sluttkvaliteten i sider. Blant polyfenolene økte innholdet av (+)-catechin, phloretin, koffeinsyre og quercetin i samtlige av sidervariantene, som følge av fermentering. Klorogensyre var den mest vesentlige polyfenolen i alle sidervariantene, men forekom i høyere konsentrasjon i eplejus. Innholdet av de fleste de analyserte organiske syrene økte fra eplejus til ferdig sider. Det ble funnet signifikante forskjeller i forekomsten av enkelte komponenter som følge av eplejusvariant og gjærtype. Sidervariantene som ble tilsatt honning fikk påvist noe høyere konsentrasjon av etyl acetat, etyl octanoat, phloretin, koffeinsyre og quercetin, og noe lavere innhold av isobutyl acetat, isoamyl acetat og phloredzin, sammenlignet med tilsvarende sidervarianter tilsatt sukker.en_US
dc.description.abstractCider is a result of fermented apples, where many biochemical processes affect the organoleptic properties of the final product. The interaction between yeast and apples is crucial for the production of distinctive and tasteful ciders, which promote the desired aroma with a balance of sweetness, bitterness (tannin) and acidity. Two apple varieties, Aroma and Mutsu, were pressed into apple juice and fermented with three different types of yeast under equal conditions. This resulted in 6 different cider varieties. These were added sugar or honey before secondary fermentation to promote sweetness and carbonation in the final product, which resulted in 6 new cider varieties. The purpose of the master thesis was to study differences and similarities in the production of flavors and aroma components in the different cider varieties, as a result of apple variety and / or yeast type. In addition, it was desirable to study the effect on the content of volatile components and polyphenols as a result of added sugar compared with honey. The fermentation process was followed daily through brix measurements until the change in dissolved solids decreased after 9 days. It was taken measurements of both apple juices before fermentation and of all the cider varieties after the addition of sugar / honey. The content of free amino acids, carbohydrates, organic acids, volatile components, polyphenols and L-malic acid were determined through various analytical methods. The results from the analyzes showed some differences in the occurrence of certain biochemical components for the different apple juice types and cider varieties. The most predominant and important volatile components that increased from apple juice to finished ciders for all of the varieties were ethyl acetate, isobutyl acetate, isoamyl acetate, ethyl hexanoate, ethyl octanoate and 3-methyl-1-butanol. These are associated with fruity, floral, alcohol and sweet aromas and are important for the final quality of ciders. Among the polyphenols, the content of (+) - catechin, phloretin, caffeic acid and quercetin increased in all of the ciders, as a result of fermentation. Chlorogenic acid was the most important polyphenol in all the cider varieties, but occurred in higher concentrations in apple juices. The content of most of the analyzed organic acids increased from apple juice to finished cider. Significant differences were found in the occurrence of certain components as a result of the apple juice variant and yeast type. The cider varieties which was added honey showed a slightly higher concentration of ethyl acetate, ethyl octanoate, phloretin, caffeic acid and quercetin, and lower content of isobutyl acetate, isoamyl acetate and phloredzin, compared with similar cider varieties that where added sugar.en_US
