dc.description.abstract | Aromastoffer i øl er viktig for å gi ølet en særegenhet. Gjær er en stor bidragsyter. Metabolitter fra gjær bidrar til en rekke smaker og aromastoffer som er ønskelig i øl. Flyktige stoffer som estere, høyere alkoholer, vicinale diketoner, aldehyder (VDK) og sulfatgrupper
er alle med på å definere aromaprofilen til øl. Mengden aromastoffer som produseres påvirkes av vekstbetingelsene til gjærcellene. Faktorer som temperatur, pH, næringstilgang, oksygen og tilføring av trykk er eksempler på måter man kan påvirke gjær.
Aromakomponentene som forekommer i større konsentrasjoner i øl er høyere alkoholer som n-propanol, 3-metyl-1-pronanol, 3-metyl-1-butanol, fenyletyl alkohol og 2-metyl-1-propanol, hvorav alle er viktige bidragsytere når det gjelder smakkomponenter i øl. Det samme gjelder for estere i form av etyl acetat, isobutyl acetat, fenyletyl acetat, etyl hexanoat og ethyl oktanoat, men disse produseres i små konsentrasjoner. De to kjemiske gruppene har en synergistisk effekt på smak og aroma i ølet da majoriteten av disse stoffene ligger under terskelverdien for smak i øl.
Hensikten med denne oppgaven er å undersøke fire forskjellige gjærstammer og se på hvordan effekten av tid og temperatur påvirker vekst og metabolisme hos gjær. Temperaturens bidrag til aroma og smak undersøkes. Det ble utført ett vekstforsøk der det ble sett på veksten av gjærceller og deres utvikling over tid ved 18, 22 og 25,5 °C. Gjær ble podet til vørter med en standardisert sukkerkonsentrasjon (16,2 °Plato) og det ble gjort målinger ved tid 0, 24, 96 og 168 timer. Det ble også brygget ett øl basert på hver gjærstamme med den samme vørterresepten, og brygget ble sammenliknet med to kommersielle belgiske øl.
Det kunne observeres raskere reduksjon av pH og sukkerkonsentrasjon i vørter ved økt temperatur. Dannelsen av aromatiske stoffer som estere og høyere alkoholer målte en generelt høyere konsentrasjon av hver komponent ved høyere temperatur. Temperatur hadde en klar effekt på vekst, etanol- og CO2 -produksjonen til hver gjærstamme.
Konklusjonen med oppgaven er at temperatur har noe å si for graden av aroma og smak i øl. | nb_NO |
dc.description.abstract | Aromatic compounds in beer are of great importance to give the beer its own character. Yeast
is a huge contributor when it comes to flavor and aromas in beer. Volatile compounds as
higher alcohols, esters, aldehydes, vicinal diketones (VDK) and sulfides are all contributors
to the characteristics of beer. The growth rate of yeast and the factors contributing to growth
influence the concentration of aromatic compounds that is produced. Temperature, pH,
accessibility to nutrients, oxygen-concentration and pressure are all factors that influence
yeast growth. The major groups of volatile compounds found in beer are higher alcohols and
esters especially n-propanol, 3-methyl-1-pronanol, 3-methyl-1-butanol, phenyletyl alcohol, 2-
methyl-1-propanol and ethyl acetate, isobutyl acetate, phenylethyl acetate, etyl hexanoate and
ethyl oktanoate. The majority of these compounds are below the treshhold for taste, but still
these volatile compounds contribute in a huge way due to the synergistic effect on flavour
and aroma.
The purpose of this Masters thesis is to study growth and metabolism in four different yeast
strains. How temperatur and time influensens the growth and metabolism will be investigated
through a series of experiments. Growth studies of the yeast was monitored over 168 hours,
fermenting at three different temperatures; 18, 22 and 25,5 °C. The yeast-culture was
transferred to a standard wort-solution with a conscentration of sugars of 16,2 °Plato.
Mesurments was done after 0, 24, 96 and 168 hours. The four yeaststrains was also used in
the fermantationprosess of making beer. These beers was compared with two commercial
Belgian Ales.
There was observered a greater decline in pH and sugar content at higher temperatures. The
development of volatile compunds like esters and higher alcohols did also on a general basis
increase at higher temperatures. Temperature had a clear correlation on the production of
ethanol and CO2, as well as for the growth rate.
The conclution of this thesis is that temperature is important for the development of yeast and
