dc.description.abstract | Kunnskap om lipidsamansetjing og –fordøying er nyttig i samband med helse og ernæring. I denne oppgåva vart det undersøkt grad av lipolyse i to ex vivo fordøya olje/vatn-emulsjonar stabilisert med myseprotein åleine samt myseprotein og kitosan.
Lipida frå dei fordøya prøvane vart ekstraherte ved bruk av ein SPE-robot og deretter esterifiserte før GC-MS-analysa. Feittsyreprofilane frå dei to emulsjonane vart deretter samanlikna for å sjå om det var mogleg å observera skilnad i fordøyinga av lipid.
Gastrisk fordøying av nøytrale lipid i begge dei to olje/vatn-emulsjonane viste 0.9%. Etter 60 minutt duodenal fordøying vart det observert ein liten skilnad i total lipolyse for dei nøytrale lipida, det vil seie 78.2% for emulsjon utan kitosan, samt 76.8% for emulsjon med kitosan.
Lipolyse av nøytrale lipid tydar frigjering av frie feittsyrer. Det vart funne auka mengde frie feittsyrer ved fordøying som stemmer godt over eins med den påviste lipolysen, dette gjeld for begge emulsjonar.
Kort oppsummert kan ein seie at det var ein liten skilnad i lipidfordøyelse for emulsjonane, og at ein ser potensielt interessante skilnadar under vegs i fordøyinga. | nb_NO |
dc.description.abstract | Knowledge of lipid digestion is very important when it comes to nutrition and human health. In this thesis, the degree of lipolysis in ex vivo digested oil/water emulsions stabilized with whey protein concentrate was analyzed to investigate if the presence of chitosan affects the digestibility. Lipids from the digested samples was extracted by use of a SPE-robot, and thereafter esterified prior to the analysis by GC-MS. The fatty acid profiles for emulsion with and without chitosan were compared to find a potential difference in the digestion of lipids. Gastric digestion of neutral lipids in both emulsions was 0.9%. After 60 minutes of duodenal digestion, there was a small difference in total lipolysis for the neutral lipids, 78.2% for emulsion without chitosan and 76.8% for the emulsion with chitosan. Lipolysis of neutral lipids results in anrelease of free fatty acids. An increase in the amount of free fatty acids that corresponds to the neutral lipid degradation was observed, and this applies for both emulsions. In summary: there was a small difference in the total lipid digestion for the oil/water emulsions, and the lipolysis is somewhat lower in the emulsion where chitosan is present.
