dc.description.abstractKultivering av makroalger er den raskest voksende sektoren innen akvakultur, makroalger har mange fordeler fremfor landvoksende planter, som en langt høyere vekstrate og bedre evne til å binde karbon. I tillegg vil dyrking av makroalger kunne føre til økt matproduksjon uten å benytte seg av verdifulle landarealer som dyrkbarjord eller ferskvann. Brunalgen sukkertare, som denne oppgaven omhandler, kan utnyttes til humant konsum, dyrefôr og i tillegg har den et potensiale som råstoff til produksjon av biodrivstoff. Med en voksende tareindustri og økt grad av kultivering av brunalgen sukkertare vil det bli viktig at det finnes tilstrekkelig informasjon om alle stegene uansett sluttprodukt, og denne oppgaven tar for seg lagring etter høsting, før videre prosessering. Bakgrunnen for denne oppgaven er at det finnes lite forskning på hvordan sluttkvaliteten på produktet sukkertare påvirkes av ulike lagringsmetoder i perioden fra høsting til fryselagring. Hensikten med denne oppgaven var å finne ut hvordan lagring av sukkertare i luft eller gjennomstrømmende sjøvann spiller inn på kvaliteten til produktet i tidsperioden fra 0 til 72 timer post høsting ved temperaturene 5,8°C på det gjennomstrømmende sjøvannet og 6,7°C lufttemperatur. Mange produsenter benytter lagring i sjøvann, men det finnes lite dokumentert forskning på hvorfor dette er den beste lagringsmetoden. Resultatene fra denne oppgaven viste først og fremst at lengden på lagringstiden etter høsting er en svært viktig faktor ved lagring av sukkertare. Flere faktorer, som antioksidantkapasitet, målt ved evne til å chelatere jern, lyshet i tarebladene og tørrstoffinnhold ga signifikante forskjeller for faktoren lagringstid. Det var også tydelig at de fleste endringene som finner sted i løpet av den totale lagringsperioden på 72 timer skjer i løpet av de første 6 timene av lagringstiden. Ved gjennomføring av en elementanalyse ble det tydelig at sukkertaren vil ha et mer gunstig mineralinnhold etter lagring i gjennomstrømmende sjøvann enn ved tørr lagring. Uansett lagringsmetode ble det observert et høyt jodinnhold, noe som vil være en utfordring ved humant konsum. En ulikhet mellom lagringsmetodene er at det forekom en større grad av utvasking av pigmenter etter lagring i gjennomstrømmende sjøvann. Samlet sett ble det ikke observert stor grad av signifikante effekter av de ulike lagringsmetodene.nb_NO
dc.description.abstractCultivation of seaweed is the fastest growing sector within aquaculture. Compared to plants on land seaweed also has a lot of environmental advantages, like a higher growth rate while using minimal resources and they also have a better capacity of binding carbon. With respect to food production, the macro algae have the ability of producing large amounts of highly nutritious biomass without the use of arable land and fresh water. The brown algae called sugar kelp, which was studied in this thesis, can be exploited both as human food, animal feed and also as ingredient for production of biofuels. To develop a growing seaweed industry and the growth within the cultivation of these it will be necessary to provide relevant information regarding all the steps during the cultivation process. This thesis is focusing on early postharvest changes in quality before further processing begins. There is very little information and research on how the end quality of the product sugar kelp will be affected by different storage conditions early postharvest. The aim of this study was to elucidate how storage of sugar kelp in air or in circulating seawater will affect the end quality of the sugar kelp after storage at two different conditions. Different length of storage was investigated, from the time 0 to 72 hours storage at the two conditions. A lot of kelp producers are using seawater storage as the first step postharvest, still there are not many studies suggesting why this is the best storage condition. The results from this study showed that the storage time is a very important factor regarding postharvest storage of sugar kelp. Several results from the experiments; antioxidant capacity measured as ferrous iron chelating activity, lightness in the kelp blades and the dry matter content gave significant differences for the factor storage time. Another observation was that the biggest changes occurred during the first 6 hours of storage postharvest. Element analysis showed that the best mineral composition for human consumption was found in the sugar kelp stored in circulating seawater compared to the samples that were stored dry. A clear difference between the two methods was that the kelp stored in circulating seawater lost higher amount of pigments during the total storage time. For both storage conditions it was found that the iodine content was high, and this will be a challenge regarding human consumption unless additional processing is added.nb_NO
