dc.description.abstractI denne oppgaven ble det ystet Gouda-type ost ved bruk av fire forskjellige ystingsteknikker. Bakgrunnen for forsøket var å undersøke hvordan kjemiske og sensoriske aspekter utviklet seg mellom ost ystet på tradisjonell måte, ost ystet fra kaseinstandardisert ystemelk og ost ystet fra kasein- og laktosestandardisert ystemelk, gjennom et modningsforløp på 16 uker. Kaseinstandardisering ble gjort ved mikrofiltrering (MF) og kasein- og laktosestandardiseringen ble gjort ved mikrofiltrering etterfulgt av diafiltrering (MF/DF). Ved å benytte seg av kaseinstandardisert ystemelk kan man nøytralisere naturlige variasjoner av kaseininnholdet i melk. Dette vil kunne bidra til en bedre standardisering av ysteprosessen og gi en jevnere kvalitet på osten. Ved i tillegg å diafiltrere ystemelken vil man kunne regulere og standardisere laktoseinnholdet før ysteprosessen, noe som medfører at mysefortynningssteget kan utelukkes. Det ble i tillegg benyttet to forskjellige ystingsteknikker basert på MF/DF ystemelk for å undersøke hvordan en redusert formodningstid ved en økning av podeprosenten påvirket ystings- og modningsforløpet til osten. Resultatene viste at det var klare forskjeller mellom ostene ystet med de ulike ystingsteknikkene. Gjennom modningsforløpet hadde MF/DF ostene en gjennomgående lavere pH enn kontroll og MF osten. Innholdet av tørrstoff og total nitrogen i ostene viste seg i stor grad å være avhengig av konsentreringsfaktoren til kasein, hvor MF osten hadde det gjennomgående høyeste tørrstoff og total nitrogen innhold og kontrollosten det laveste. Den proteolytiske aktiviteten viste seg å være betydelig høyere i MF og kontrollosten, hvor disse hadde et høyere innhold av løselig nitrogen og frie aminosyrer enn MF/DF ostene. Flere av resultatene tydet også på at det hadde forekommet en ulik bakteriologisk aktivitet mellom de ulike ostene gjennom modningsforløpet. Innholdet av kalsium, magnesium og fosfor viste seg derimot å bli lite påvirket av de forskjellige ystingsteknikkene. Den generelle tendensen fra de kjemiske analysene viste at MF og kontrollosten hadde en relativ lik utvikling gjennom modningsforløpet og at de skilte seg fra MF/DF ostene, som også hadde en lik utvikling. Ut ifra den beskrivende sensoriske analysen hadde MF osten den hardeste og mest elastiske strukturen, mens kontrollosten var minst hard og elastisk. MF/DF ostene skilte seg betydelig fra MF og kontrollosten ved at de hadde en høyere intensitet av smaksegenskapene surhet og besk/bitter.nb_NO
dc.description.abstractIn this study Gouda cheese was made using four different cheese making techniques. The aim of this study was to investigate how chemical and sensory aspects developed between cheese made in the traditional way, cheese from casein-standardized milk and cheese made from casein and lactose standardized milk through 16-week of maturation. The casein standardization was done by microfiltration (MF), and the casein and lactose standardization was done by microfiltration followed by diafiltration (MF/DF). By using casein standardized cheese milk, the natural variations of the casein content in milk can be neutralized. This may contribute to standardize the cheese making process, and to provide cheese with a more even quality. The addition of a diafiltration step enables regulation and standardisation of the lactose content prior to the cheese making process, which means that the whey dilution step can be excluded. In addition, two different cheese making techniques based on the MF/DF cheese milk were used to investigate how a reduced preacidification time, in combination with an increased amount of starter culture added, affected the cheese making and maturation process of the cheese. The results showed clear differences between cheeses made from the different cheese making techniques. Throughout maturation, the MF/DF cheeses had a consistently lower pH than the control and the MF cheese. The content of dry matter and total nitrogen in the cheeses was largely dependent on the casein concentration factor, where the MF cheese had the highest content and the control cheese the lowest. The proteolytic activity was found to be significantly higher in MF and control cheese, where these cheeses had a higher content of soluble nitrogen and free amino acids than the MF/DF cheeses. Several of the results also indicated difference in the microbial activity between the various cheeses through the maturation process. The calcium, magnesium and phosphorus content, however, turned out to be less affected by the various cheese making techniques. The general trend for the chemical analyzes was that the MF and the control cheese had a similar development and that they differed from the MF/DF cheeses. Based on the descriptive sensory analysis, the MF cheese had the hardest and most elastic structure, while the control cheese had the least. The MF/DF cheeses differed significantly from the MF and control cheese as they had a higher intensity of the flavor properties acidity and bitterness.nb_NO
