Optimal harvest date is essential to obtain best possible quality in apples. Too early or too late harvesting may lead to lower sensoric quality and shorten the storage time. I the current study the possibility of monitoring ripening and estimating optimal harvest date with non-destructive methods in three Norwegian cultivars (Discovery, Summerred and red Aroma) was investigated. I addition, it was investigated if the same methods could be used for sorting apples in two ripening degrees before storage. The non-destructive instruments tested were VIS/NIR-spectroscopy, the DA-meter (a handheld instrument based on VIS-spectroscopy) and Multiplex-3 (a handheld instrument based on chlorophyll fluorescent). The ripening degree could be monitored quite accurate with NIR-spectroscopy through the increase in soluble solids content and with the DA-meter and Multiplex-3 through the degradation of chlorophyll. NIR calibration models obtained for other ripening parameters, such as starch, colour and firmness, were not accurate enough to monitor ripening. Before storage the apples were sorted in two ripening categories based on sugar, starch or chlorophyll content. After storage in 4, 8 or 12 weeks (at 1 or 4°C) the apples were analysed for possible differences in quality between the two ripeness categories. Sorting based on starch content (NIR-spectroscopy), showed no observed differences in quality after storage. This was probably because of a less accurate model. Fruit sorted on estimated sugar (NIR-spectroscopy) and chlorophyll content (DA-meter) and classified as less mature, developed less rot and physiological disorders after storage than the fruit classified as more mature.nb_NO
