Abstract
I denne oppgaven ble effekten av formodning ved ysting av Gouda-type ost fra kaseinstandardisert ystemelk undersøkt. Fokuset var på kalsiuminnholdet og konsistensen til osten. Proteininnholdet i den kaseinstandardiserte ystemelken ble oppnådd ved mikrofiltrering (porestørrelse, 0,14 μm), og det ble brukt en konsentrasjonsfaktor på 1,15. Faktoren for hovedforsøket var formodning, og 3 gjentak ble gjennomført med nivåene 45, 60, 75 og 90 minutter formodning. Hovedanalysene, brukt for å finne effekten av formodning, var pH-målinger, kjemisk analyse av kalsium, magnesium og fosfat, samt sensorisk analyse av tekstur.
Resultatet fra analysene viste at det var signifikant effekt av formodning med tanke pH-utvikling i ysteprosessen. Lang formodning ga en lavere pH enn kort formodning. Videre var det ingen signifikant effekt av formodning på innhold av kalsium og fosfat i ostene. For magnesium var det signifikant lavere innhold i osten (etter 24 timer) der ystemelken var formodnet i 60 minutter. Denne osten hadde den lavest pH etter 24 timer av ostene i forsøket, men ikke signifikant forskjellig. Ved sensorisk analyse utpekte den samme osten seg, og ble beskrevet som mer deiget og oppløselig, og mindre tørr og grynet enn de andre ostene.
Denne oppgaven viste at det er mulig å yste Gouda-type ost fra kaseinstandardisert melk med god tekstur, selv om de fire valgte formodningstidene ga lik effekt på kalsiuminnholdet. Videre arbeid burde være: å fokusere på hvor mineralene foreligger etter filtrering, mengde og hvilken syrekultur som er best, bufferkapasiteten til melka og pH i osten etter 24 timer. In this study, the influence of the extent of pre-coagulation acid development during cheese
making of Gouda type cheese from casein-standardized cheese milk, was examined. The
focus was on calcium content and texture of the cheese. The protein content of the caseinstandardized
milk was obtained by microfiltration (pore size 0.14 μm) with a concentration
factor of 1.15. The experimental factor of the main experiment was pre-coagulation acid
development, and 3 trials was performed with the levels of 45, 60, 75 and 90 minute of precoagulation
acid development. To detect the effect of pre-coagulation acid development, the
main analysis was pH measurements, chemical analysis of calcium, magnesium and
phosphate and sensory analysis of texture.
The results showed that there was a significant effect of pre-coagulation acid development, on
the development of pH during cheese making. A longer pre-coagulation acid development
gave lower pH than a short pre-coagulation acid development, though, there was no
significant effect of pre-coagulation acid development on the content of calcium and
phosphate in the cheeses. For magnesium, there was a significantly lower content in cheese
(after 24 hours) in which the cheese milk had a 60 minutes pre-coagulation acid development
time. This cheese (after 24 hours) did also have the lowest pH in the experiment, but not
significantly different from the other cheeses. Sensory analysis also indicated that the same
cheese was more doughy and soluble, less dry and gritty.
This paper showed that it is possible to make Gouda type cheese from casein standardized
milk with good texture, even though all the four selected intervals for pre-coagulation acid
development gave similar effect on calcium content. Further work should be: to focus on the
location of the minerals after filtration, the quantity of and finding the best starter culture, the
buffering capacity of the milk, and the pH in the cheese after 24 hours.
