dc.description.abstractI denne oppgaven ble effekten av gjær i blåmuggost undersøkt med fokus smak og produksjon av flyktige aromakomponenter. Blåmuggsot ble produsert og tilsatt gjær. 3 gjærtyper ble brukt under forsøket, disse ble sammenlignet med kontrollost. Gjærtypene var: Debaromyces (D.) hansenii, Kluyveromyces (K.) marxianus og Saccharomyces (S.) cerevisiae. Ostene ble analysert kjemisk, mikrobielt og sensorisk. Vaskingen hadde ingen vesentlige effekter i osten og dens kjemiske sammensetning. Sensorisk analyse gav ingen signifikante utslag, men dette skyldtes trolig metodikken. De kjemiske resultatene viste klare forskjeller. To gjærtyper Saccharomyces cerevisiae og Debaromyces hansenii skilte seg tydelig ut fra konrollosten med hensyn til dannelse av aromakomponenter. Kluyveromyces marxianus skilte seg svakt fra konrollosten, ved en litt kraftigere proteolyse enn kontrollosten. Saccharomyces cerevisiae hadde økt produksjon av flyktige aromakomponenter, trolig gjennom å stimulere vekst av Penicillium (P.) roqueforti, en tidligere kjent egenskap til Saccharomyces cerevisiae. Denne forskjellen i dannelse av aromakomponenter var den mest fremtredende i oppgaven. Debaromyces hansenii hadde svakere aromakomponentproduksjon sammenlignet med alle andre oster i forsøket. Dette skyldtes mest sannsynlig, en tidligere kjent evne, til å hemme Penicillium roqueforti, ostens viktigste produsent av smak.no_NO
dc.description.abstractIn this paper the influence of yeast on the flavor in blue cheese was investigated. Under the production, the cheese was added 3 species of yeast: Debaromyces (D.) hansenii, Kluyveromyces (K.) marxianus og Saccharomyces (S.) cerevisiae. Chemical and microbiological analyzes of the cheese was carried out, along with sensory testing. Washing of the cheese had no relevant effect on the aroma component production. The sensory testing gave no results, most likely since a wrong method of testing was being used. Chemically, several significant differences was found. Saccharomyces cerevisiae and Debaromyces hansenii had opposite effects on the cheese-ripening. Kluyveromyces marxianus had a minor increase in proteolytic activity. Saccharomyces cerevisiae had a clearly higher production of flavor components compaired to the control cheese. This is most likely due to a formerly known interaction with Penicillium (P.) roqueforti. With the result that P. roqueforti, gets increased growth and flavor protuction. Debaromyces hansenii had weaker development of flavor components, most likely due to inhibition of P. roqueforti, a formerly known effect of this yeast.
