dc.description.abstractHumle er først og fremst viktig for smaksopplevelsen som kjennetegner øl, hvorav bitterheten er av spesiell betydning. Det er α-syrene i humle, som etter omdanning til vannløselige iso-α-syrer gir ølet bittersmak. Hvor mye av α-syrene som omdannes til iso-α-syrer og som blir med i det ferdige ølet, det vil si utbyttet av bitterkomponentene, er i stor grad avhengig av humleproduktet som tilsettes. En stor del av humleplantene som dyrkes blir i dag foredlet til ulike humleprodukter, som pellets, ekstrakter og isomeriserte produkter. Ringnes Pils, som denne oppgaven omhandler, brygges i dag med pellets Type 90, et humleprodukt som gir et relativt lavt ubytte av bitterkomponentene. Det er for tiden stort fokus på produksjonskostnader og ølpriser innen bryggeriindustrien. Ringnes Pils er et øl som brygges i store kvanta ved Ringnes Bryggeri. En liten reduksjon i humlekostnadene for hvert produserte brygg vil derfor bety store totale kostnadsbesparelser for bryggeriet. I denne masteroppgaven tar jeg for meg de mulige fordelene ved å endre humleprodukt, og problemstillingen lyder som følger: Hvilket humleprodukt er mest fordelaktig å bruke ved bryggeriet, med hensyn til produksjonsteknikk, produktkvalitet og økonomi? For å undersøke dette ble Ringnes Pils brygget i storskala med tre ulike humleprodukter; IKE/pellets Type 90 (50/50 iso-α-syrebidrag, tilsvarende 43/57 iso-α-syrer/α-syrer), CO2-ekstrakt, og ren pellets. De økonomiske forutsetningene ble sammenlignet ved å analysere og beregne utbyttet av bitterkomponentene, og ut fra dette de reelle prisene på humleproduktene. Analysene av bitterkomponentene ble utført ved hjelp av spektrofotometri og High Performance Liquid Chromatography (HPLC). Kvaliteten til hvert brygg, med hensyn til humleprodukt, ble sammenlignet ved hjelp av sensoriske analyser. I tilegg ble nødvendige prosesstekniske installasjoner og forutsetninger for eventuell humleproduktendring vurdert. Resultatene viser at det er mulig å produsere Ringnes Pils av høy kvalitet med humleproduktkombinasjonen 50/50 IKE/pellets. Kjemiske analyser viser også at det er IKE/pellets som gir best utbytte av bitterkomponentene, og at det er dette humleproduktet som er mest fordelaktige økonomisk. Det kan være nødvendig å implementere en inndoseringsenhet for IKE i prosessen, men IKE/pellets likevel vil redusere kostnadene ved produksjonen av Ringnes Pils. I følge økonomiske beregninger utgjør en overgang til IKE/pellets et verdipotensial på cirka 470 000 NOK per år for Ringnes Pils. Hops have a unique effect on the flavour in beer, of which bitterness is of special importance. The α-acids present in hops are precursors of beer bitterness since they are converted into iso-α-acids – the water soluble bitter tasting components. The utilisation of hop acids is much affected by the type of hop product used. Today a substantial part of the hop crop is processed into different hop products, like pellets, extracts and isomerised products. Ringnes Pils, which this paper deals with, is normally hopped with Pellets Type 90, a hop product that provides a relatively low yield of bitter components. There is currently a strong focus on lowering production costs and beer prices within the brewery industry. Ringnes Pils is a beer brewed in large volumes at Ringnes AS. A small reduction in hop material costs for each brew will therefore result in large overall cost savings for the brewery. In this master thesis I discuss the potential benefits of changing the hop product, and the objective of the research is as follows: Which hop product is most favourable to use at the brewery, with respect to manufacturing technique, product quality and economy? Ringnes Pils was brewed in large-scale with three different hop products; IKE/pellets Type 90 (50/50 iso-α-acid contribution, corresponding 43/57 iso-α-acids/α-acids), CO2-extract, and pellets Type 90. The economic aspects were compared by analysing and calculating the yield of the bitter components, and on this basis the effective prices of the hop products. The analyses of bitter components were performed using spectrophotometry and High Performance Liquid Chromatography (HPLC). The quality of each brew, with respect to the hop products were compared using sensory analysis. Additionally, necessary process technical installations and other requirements for a potentially change in hop product were considered. According to the results, it is possible to produce Ringnes Pils of high quality by using the hop product combination IKE/pellets. Chemical analyses also show that IKE/pellets provide the best yield of bitter components, and that this combination is most advantageous with regard to the economy. It may be necessary to implement a dosing unit in the production process, but IKE/pellets will still reduce the cost of production of Ringnes Pils. According to financial calculations a swap from pellets to IKE/pellets represent a potential value of approximately 470 000 NOK (62000 €) per year for Ringnes Pils.no_NO
